East End WI bake sale – bookclub brownies


Mile End Park had a fete on Saturday, and the EEWI was there with cakes, tea and coffee. The rain held off and I think they made quite a profit by the end of the day. My offering was a plate of Bookclub Brownies from the Joy of Cooking:

1/2 cup butter
100 grams dark chocolate, broken into chunks
1 3/4 cup sugar
4 large eggs
1 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

A 9X9in square pan is recomended, but I didn’t have one – a 9in round ceramic pie dish did the trick, and the resulting rectangular brownies were quite pretty (no photos, sorry!)

Start by melting the butter and chocolate in a small saucepan. While melting, get your other ingredients together. Combine the eggs and vanilla in one small bowl; flour and baking powder in another. Once the chocolate and butter have melted, pour this into a large mixing bowl and add the sugar, mixing well. At this point add in the egg/vanilla mixture and mix well. Finally, add dry ingredients. Be gentle, folding until just mixed.

Spread a little butter on the bottom of the pan and lay a piece of parchment paper, so the brownies don’t stick.

Using a rubber spatula, Pour the mix into the pan, scraping out all the batter. Bake in a 350°F/177°C oven for about 30 minutes, or until the middle has a bit of resistance to the touch, and a cake tester or knife comes out almost clean.
